St Lucian chef takes Caribbean grub to the Today Show

Viewers of the Today Show got a six-minute crash course in Caribbean fare preparation from a couple of pros.

Chef Nina Compton and musician Kenny Neal were engrossed in a live demo on the daily show to create two quick Caribbean-infused meals.

Compton is a St Lucian culinary artist, who copped the James Beard Award for Best Chef, South, in 2018. She currently resides in New Orleans, Louisiana.


According to The Connect Group, Compton as chef/owner of the award-winning Compère Lapin and Bywater American Bistro (BABs) in New Orleans.

There she combines her love for French and Italian cuisine with the flavours of the Caribbean, in homage to her Caribbean roots.

Compton confirmed that ‘the recipe brings a fun Caribbean twist to a tailgating party’, ‘…this is football food, NOLA-style!’ she added.

Harvest Culinary grad, Chef Kenny Neal followed with his interpretation of a spicy Jerk chicken sliders with mango slaw, slaw in honour of Tampa Bay, Florida.

Neal is the principal of Kolaiahs Caterers in Orlando, Florida.

Last October, Neal joined Today Show host Al Roker in an attempt to participate in the Guinness Book of World Records with an online sandwich-making relay.

‘I love this recipe because it is simple but good,’ Neal shared. ‘It's kid-friendly and great tailgate item with a twist.’
